Dark rum soaked olive oil cake, coconut cremeux with white chocolate pearls, pineapple mousse, macerated fruit & honey tuile. Accompanied by a rum semifreddo atop coconut sable.
Octopus Bacon Wrapped Scallops
with a cognac & pinot gris sauce
French Onion Sausage Pasta
New Zealand Rack of Lamb with Grits
consumé with cumin, thyme, cardamom, curry powder, garlic, tumeric & saffron
